- 100g quinoa
- 400ml milk
- 100ml double cream
- 3 tablespoons peanut butter
- A pinch of salt
- 1 tablespoon sugar (adjust according to your preference)
Toast the quinoa in a saucepan for a few minutes, stirring continuously.
Add all the other ingredients. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 10-15 minutes until the quinoa is cooked and the liquids are absorbed. Stir occasionally to prevent the pudding from sticking to the bottom of the pan. It is ready when it reaches a creamy and thick consistency.
