  • 1 small very ripe bananas
  • 1 large eggs
  • 120 ml milk
  • 0.5 teaspoon vanilla extract
  • 0.5 tablespoon ground flaxseed
  • 1 teaspoons baking powder
  • 0.5 teaspoon cinnamon
  • 70 g buckwheat flour or whole wheat (See Notes at the bottom if using whole wheat)

 

Method:
  1. Begin by blending the baby spinach, bananas, eggs, milk, vanilla extract, and ground flaxseed in a blender. Blend until you achieve a smooth, vibrant green mixture.

  2. In a separate mixing bowl, combine the buckwheat flour (or whole wheat if you prefer) with baking powder and cinnamon. Give it a gentle stir to ensure the dry ingredients are evenly distributed.

  3. Gradually pour the blended spinach-banana mixture into the dry ingredients. Use a spatula to gently fold and combine the wet and dry components. Be mindful not to overmix; a few lumps are perfectly fine.
