Lemon cashew energy bites

Nut butter mixed with oats are always a winner mixture, full of protein and fibre and super delicious if flavoured well. In this recipe I am using our lemon flavoured cashew butter with some lemon juice and a touch of maple syrup to balance the sourness. 

A perfect energy bomb for a pick me up in the middle of the day, or a bite in the morning before a gym session. 

It takes 5 minutes to make them, and you can store them in the fridge ready for the rest of the week. 

Lemon cashew bites

Ingredients:

100g Filthy Fit lemon cashew butter

40g oat flour (rolled oats blended till flour like)

20g maple syrup

Juice of half lemon

Dessicated coconut to cover

 

Method:

Measure 100g lemon cashew butter in a bowl. 

Measure 40g of rolled oats in a blender and blitz until it becomes flour-like. 

Add the oat flour to the cashew butter and add 20g of maple syrup, then the juice of half lemon. 

Mix it with a fork until well combined, then form 6-7 balls with your palms. 

Roll them into some dessicated coconut and serve immediately, or keep in the fridge in an airtight container for up to 1 week.
