Peanut Butter Banana Oat Muffin

Ingredients for 12 muffins:

  • 3 ripe bananas
  • 130 g Filthy Fit peanut butter
  • 4 tbsp honey
  • 2 eggs
  • 2 tsp vanilla
  • 130 g oat flour
  • 1 tbsp baking powder
  • Pinch of salt
  • Dark chocolate chips

Method:

Start by preheating your oven to 180°C and lining a muffin tin with paper liners. In a large mixing bowl, mash 3 ripe bananas until smooth. Add in peanut butter, eggs, honey, vanilla extract, and mix until well combined.

In a separate bowl, whisk together oat flour, baking powder, and a pinch of salt. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the dark chocolate chips, but make sure not to overmix.

Scoop the batter into the prepared muffin tin, filling each cup about ¾ of the way full. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool in the tin for a few minutes before transferring them to cool completely.
