These banana oat cookies are the quickest healthy treats you can make when you really fancy something sweet. You can measure the ingredients while your oven reaches the right temperature, then you just need to literally scoop the batter with a tablespoon and your whoopie pies will be ready baked 12-14 minutes later. 

Just make sure to wait 5 more minutes until they cool down a bit, don’t burn your mouth. I recommend spreading nut butter only on those ones you will finish and keep the rest in an airtight container for up to a week, they will keep soft and yummy. 😊

Banana Oatmeal Cookies - Filthy Fit recipe

Ingredients for 8 cookies:

60 g oat flour

30 g oats

2 small bananas – mashed

2 tbsp erythrite

2 tbsp maple syrup

1 tbsp coconut oil

0.5 tsp baking powder 

0.5 tsp baking soda

0.5 tsp cinnamon

0.5 tsp ground ginger

Filthy Fit cashew-peanut butter to fill them (optional)


Method:

Preheat the oven to 170 degrees C.

Combine all ingredients together in a mixing bowl. Your batter should be a bit runny.

Line a baking tray with baking parchment. With a tablespoon scoop 12 cakes from the batter and transfer to the baking paper. Do not flatten them. Leave a gap between the cakes because they will grow during baking. 

Bake for 12-14 minutes until golden.

When the cakes are ready, let them cool down and fill with nut butter.
