Who likes peanut butter and jelly sandwich? And French toast? Yes, I love them both too! I tried to mix and transform PBJ and French toast to get a healthier vegan version and it worked out so good I need to share with you guys.
The natural sweetness of the cashew butter goes well with the sour blueberries and the added sweet cassia balance the flavours perfectly. I will definitely keep experimenting with peanut or almond butters and different fruits, like raspberries or bananas as well.
Easy and quick sweet treat on the healthier side.
Ingredients for 2:
4 slices of whole wheat bread
2 tbsp cashew butter (I used Filthy Fit cashew butter)
Blueberries (depends on the size of the bread but add quite a lot)
0.5 tsp cinnamon (I used cassia because that is sweeter)
2 tbsp vegan butter
Method:
Spread the cashew butter on 2 slices of bread, hint with cinnamon and put some blueberries in them. Place the other 2 slices of bread on the top of the loaded slices.
Heat one tablespoon butter in a pan until melted and pan-fry both sides of the sandwiches for 2-3 minutes until golden and crispy. Add the second tablespoon of the butter when flipping the sandwiches.
