I hear a lot from people that they just hate the taste of fresh coriander. If you are one of these people, don't read further because these fritters have quite strong coriander flavour. 

There are plenty of options to add more taste by adding different herbs and spices to your fritters. I chose the Italian herbs in this recipe but you can add paprika or garlic too, for example. 

Serve as a starter, as a side with a main course, or as a healthy savoury snack between meals. 

Carrot Coriander Fritters - Filthy Fit recipe 

Ingredients for 10 fritters:

120 g chickpea flour

80 ml water

2 tsp baking powder

0.5 tsp of each: basil, thyme, rosemary, and oregano

Pinch of sea salt

1 carrot - shredded

30 g fresh coriander

4 tbsp olive oil 


Method:

Measure all ingredients but the oil in a large bowl and mix well. 

Take a large pan and heat 4 tablespoons of olive oil over medium heat.

Scoop the batter on the hot pan with a spoon and fry them for 3-4 minutes each side. 

Serve with yoghurt or sour cream.
