This is a little boozy version of an original banana bread recipe, but don't worry not as much to keep it away from children. A touch of coffee liquor (I used a double shot of Kahlua) makes it a bit special and exciting but still affordable.

Make sure your bananas are super ripe, otherwise you won't be able to smash them well enough. I few smaller lumps won't cause an issue.

The average baking time is 45-50 minutes, but it's worth checking it from 40 minutes onwards to avoid burning or undercooked middle part.

Best to be served with Filthy Fit Cofiesta brazil nut butter. :)

Cofiesta Banana Bread - Filthy Fit recipe

3 ripe bananas

65 g melted butter

2 tbsp rapeseed oil

65 g sugar

32 g greek yoghurt

2 eggs

50 ml coffee liquor

260 g flour

1 tsp baking soda

1 tsp sea salt

Preheat the oven to 180 degrees C.

In a large bowl, combine all the wet ingredients together. Whisk until no big lumps remain.

In another bowl, mix the dry ingredients together.

Mix the dry ingredients with the wet ingredients together with a spatula.

Wipe a small loaf tin with oil than pour in the batter.

Bake for around 50 minutes. Let it cool down, then slice up and serve with delicious Filthy Fit nut butter.
