This is a little boozy version of an original banana bread recipe, but don't worry as much to keep it away from children. A touch of coffee liquor (I used a double shot of Kahlua) makes it a bit special and exciting but still affordable.
Make sure your bananas are super ripe, otherwise you won't be able to mash them easily. I few smaller lumps won't cause an issue though.
The average baking time is 45-50 minutes, but it's worth checking it from 40 minutes onwards to avoid burning or leaving under cooked in the middle.
Best to be served with Filthy Fit cashew butter with Brazil nut and coffee. :)
Ingredients:
3 ripe bananas
110g melted butter
2 tbsp rapeseed oil
100g sugar
30g greek yoghurt
2 eggs
50ml coffee liquor
240g flour
1 tsp baking soda
1 tsp sea salt
Method:
Preheat the oven to 180 degrees C.
In a large bowl, combine all the wet ingredients together. Whisk until no big lumps remain.
In another bowl, mix the dry ingredients together.
Mix the dry ingredients with the wet ingredients together with a spatula.
Wipe a small loaf tin with oil than pour in the batter.
Bake for around 50 minutes. Let it cool down, then slice up and serve with delicious Filthy Fit nut butter.
