I remember, this creamy salmon pasta was the second pasta I have tried to cook in my life. The first one was spaghetti Bolognese, of course. 

I was so happy realising how easy it was to prepare fish and how tasty the result was.  Trying this recipe, you will have dinner on the table within 20 minutes and even if the person you are cooking for is not a fan of fish, will surely finish it with a smile. 

Creamy Salmon Pasta - Filthy Fit recipe

Ingredients for 2:

2 salmon fillets

Half brown onion

2 cloves of garlic

Juice of half lemon

300 ml single cream

150 g pasta – I use spaghetti, but other shapes can be used as well

Sea salt & black pepper

1 tsp oregano

1 tsp basil 

0.5 tsp parsley

Grated parmesan (optional)


Method:

Boil a pot of water for the pasta. Cook the pasta following the instructions on the package.

Heat some olive oil in a large pan. Chop the onion into small pieces then start to cook. After 5 minutes, add the minced garlic. 

Cut the skin off the salmon and discard. Dice the salmon fillet. Add to the pan, season with salt and pepper, and squeeze the lemon juice on top. Fry the fish stirring frequently until cooked. When all the pieces are light pink and start to fall apart, it’s cooked through.

Add the cream to the pan, season with oregano, basil, and parsley, then cook for 5 minutes, until it thickens a bit.

When the pasta is cooked, drain, and mix into the sauce. Serve with some grated parmesan cheese.
