Lemonero is a lemon and black pepper flavoured cashew butter made by us, the Filthy Fit, and today I would like to share with you a couple of ideas how to use it on toast.
First of all, avocado. Just imagine when you squeeze a bit of lemon juice and sprinkle a pinch of salt on a half avocado and eat with a spoon. The goodness of cashew nuts combined with the amazingness of avocado. Yummy!
You don’t need anything else, just a slice of toast, a tablespoon of Lemonero cashew butter spread and a tablespoon of smashed avocado on top.
Avocado is sooo good for you! Avocados, just like tomatoes, are fruits but we use them as vegetables. They have high nutrient value, high in healthy fats and fibre and low in carbs, and saturated fat. The potassium content of avocado is pretty impressive as well, and this nutrient is the one that most of us don’t get enough of and potassium is important to lower your blood pressure. Studies even showed that people who eat avocados tend to be healthier than people who didn’t.
When we decided with my husband to try the vegan diet for a month, I did some research about how we are going to get the right nutrients from the right resources. I found an article that said avocados can help to absorb antioxidants so it can increase the nutrient value of other plant-based food. Impressive, isn’t it?
Second, sliced tomato with spring onion. The fresh tomato comes together with the mild spring onions and the slightly peppery cashew butter perfectly. Recommended at any time of the day but before dating. :)
Third, black olives. I don’t really like black olives on its own, but paired with something that balances its saltiness could be heavenly. With Lemonero it was so good that I can say this is the absolute winner for me.
