Most of the time I make crepes, the thin version of the pancakes. I find them less heavy and I can play more with the filling as well. But I tried ricotta pancakes for the first time not long ago and I could imagine it with our Filthy Fit Orange Crushew nut butter right away.

So I quickly checked online what sort of measurements are used for ricotta pancakes in general and started to put my own together. I wanted to make a healthier version, so I used chickpea flour that behaves quite similarly to regular white wheat flour. Chickpea flour is gluten free, rich in vitamins and minerals and you can easily make your own at home too. 

I also swapped the cow milk to almond milk because I thought that might go well together with the Orange Crushew walnut-cashew spread but cow milk will work just as good as the non-dairy milk. 

To sweeten my pancake batter, I used maple syrup but that’s not mandatory. You can add white sugar, xylitol, or stevia as well and feel free to add more sugar if you like your pancakes sweet.

Orange Ricotta Pancakes - Filthy Fit recipe - Orange Crushew nut butter 

Ingredients for 6 pancakes:

100 g flour of your choice

1 tsp baking powder

Pinch of salt

100 ml milk of your choice

100 g ricotta cheese

2 eggs

2 tbsp oil

1 tbsp orange zest

25 ml fresh orange juice

1 tsp maple syrup (add more for sweeter pancakes)

Filthy Fit Orange Crushew nut butter (optional)


Method:

Place a frying pan on your stove over medium heat.

Mix all dry ingredients in a large bowl. 

Whisk the ricotta with eggs, milk, and oil in a separate bowl.  Add the orange zest and juice as well and whisk until combined evenly. 

Pour the milk mixture into the other bowl and whisk with the dry ingredients just until combined. Don’t overmix the batter because it will lose its fluffiness. 

Wipe the pan with a bit of oil and pour in some pancake batter. Cook until golden and flip over using a spatula. Cook the other side as well until brown and continue this until you finish all your batter.

Spread some Orange Crushew walnut-cashew butter on one pancake and stack another on the top. Continue spreading and stacking until you have 6 pancakes in a pile.
