Peanut Butter Jelly Blondie

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted and cooled
  • 1/2 cup light brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 teaspoon creamy peanut butter
  • 3 teaspoon strawberry jam

Method:

Start by preheating your oven to 180°C and lightly spray a 5x5-inch baking dish with nonstick cooking spray. Set aside.

In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, mix together the melted butter and brown  and white sugar until well combined. Add the egg and vanilla extract, and stir until smooth.

Add the dry ingredients to the wet ingredients, and mix until just combined.

Spread the batter evenly into the prepared pan. Then, dollop the PB and the jam on top of the batter in spoonfuls. Use a knife to swirl the PB and the jelly into the batter, creating a marbled effect.

Bake the blondies for 25-30 minutes, or until the edges are lightly golden and the center is set. Allow the bars to cool completely in the pan before slicing and serving.
