Peacante (paprika spiced peanut butter by Filthy Fit) chicken is not just super easy to make but also healthy and nutritious. Chicken breast combined with peanut butter will make sure your body don’t lack protein, paired with brown rice and some veggies providing the vitamins, minerals and antioxidants to keep the ball rolling.
Of course, brown rice can be swapped to something else if you prefer, it just goes well with this dish. Mixing the rice with sweetcorn is also an optional alternative just to play with the flavours and spoil our taste buds.
The spicy paprika in the Peacante peanut butter is quite hot so careful filling those chicken breasts, if the peanut butter is overwhelming, it won’t be that enjoyable.
It is not mandatory to drizzle the chicken breast with olive oil, but I highly recommend, otherwise the meat could dry out quickly in the oven. I like when it’s a bit dry and crispy but I’m a bit wierdo, in some occasions.

Serves 2 people.
Ingredients:
2 chicken breast fillets
2 tablespoon Peacante nut butter
70 g brown rice
80 g sweetcorn
A small head of broccoli
Sea salt & black pepper
2 tbsp olive oil
Fresh chives – to decorate, optional
Method:
Preheat the oven to 180 degrees C.
Season the chicken breasts with sea salt and black pepper, then butterfly both. Fill the chicken breasts with 1-1 tablespoons Peacante nut butter and fold them back to their original shape.
Place the chicken breasts on a roasting tray lined with baking paper, drizzle with olive oil and roast them in the oven for 20 minutes.
Prepare two pots of water over high heat and when boiling, cook the brown rice in one and steam the broccoli above the other. The brown rice need about 25 minutes and the broccoli is best when cooked only for 5-8 minutes so I recommend to calculate timings if you are serving this meal straight after cooking and you want it to be all ready and hot in the same time.
Mix the cooked brown rice with sweetcorn.
