My forever favorite chocolate is Snickers. Probably because it’s packed with roasted peanuts and I am a nut freak… this is why I started to make my own nut butters too.

Seeking for healthy alternatives to sweets, my husband found a recipe similar to this, but that version was made with almond butter and flaked almonds. It was delicious, but I found it a bit too heavy, so I changed a few things and managed to create my own vegan, healthy-ish Snickers bar.

I recommend melting the dark chocolate and the coconut oil a bit before placing them in the blender not to damage the blades and to accelerate the blending time.

Peanut Butter Dark Chocolate Bars

 

Ingredients (makes 8-10 pieces):

60 g ground almonds 

85 g raisins

105 ml almond milk

50 g coconut oil

100 g dark chocolate

50 g cocoa powder 

2 tbsp peanut butter 

50 g roasted peanuts


Method:

Mix the ground almonds, raisins, almond milk, coconut oil and 75 g dark chocolate in a food processor or high-speed blender. Melt the dark chocolate and the coconut oil first to accelerate the blending time.

Mix in the roasted peanuts with a spatula and transfer the mixture to a tray lined with baking paper, then put it in the fridge for at least 20 minutes to set. 

Melt the remaining 25 g of dark chocolate. Remove the mixture from the fridge and spread the peanut butter evenly and pour the melted chocolate on the top. 

Put back in the fridge for 15 minutes, then slice up and enjoy!
