We are trying to add at least one or two fish meals a week to the menu. My husband doesn’t really like the taste of the fish, so I look for mostly salmon recipes because it doesn’t taste too fishy. 

One day I had a half pot of leftover ricotta and a bit of pesto left, so mixed them together and got a new, tasty salmon dish out of it. 

This is a typical super quick dinner idea ready in under 15 minutes, ideal for busy weeknights or fast lunch prep.

Serve with vegetables of your choice.

Ricotta Pesto Salmon - Filthy Fit recipe

Ingredients:

2 salmon fillets

2 tbsp ricotta

1 tbsp pesto

Sea salt

Asparagus

Cherry tomatoes


Method:

Preheat the oven to 180 degrees C. 

Season the salmon fillets with sea salt.

Place the salmon fillets on a baking tray lined with baking paper and bake for 10-15 minutes. 

Spread 2 tablespoons of ricotta and 1 tablespoon of pesto on the top of the salmon fillets evenly. 

Serve with salad or some green veggies.
