In the beginning of my cooking journey I was so scared of the idea of making my own pastry or dough. I just thought it’s going to take a long time and I probably won’t get it right anyway, so it took me a while to get started. 

Today I am sharing a simple gnocchi recipe which tastes miles better than the store-bought version, it won’t require much effort, but you can still be proud of yourself because you made your own.

If you would like to impress the family in no time, go ahead and make some gnocchi. 

You will see in the recipe that you can soften your sweet potato in a microwave in as little as 10 minutes. This applies to regular potatoes as well. If you don’t like using a microwave or you don’t actually have one, the traditional oven baked version works just as well as the microwaved one. 

I use chickpea flour in this gnocchi recipe because that is healthier than all purpose but if you don't have chickpea flour available, white or whole wheat flour will do as well of course. 

Use parmesan shavings for decoration if you like to bite on the cheese and get a richer flavour. 


Serves 2 people.

Ingredients:

1 large sweet potato

30 g grated parmesan cheese plus some to sprinkle on top

1 egg

100 g flour (all purpose or chickpea)

1 tbsp butter

3-4 basil leaves


Method:

Poke holes on the sweet potato with a fork and microwave for 10 minutes or roast for 40 minutes in the oven. 

Let it cool down a bit, then peel the potato and mash it with a potato masher. Add the egg, the parmesan and the flour and start mixing by hand.

Mix the dough until combined and smooth then cut in half and shape them in 3 cm thick and 20 cm long rolls.

Cut the rolls into cubes and shape the gnocchi pieces with a fork by rolling down the cubes on the back of the fork using your thumb.

Cook them in salted boiling water. Gnocchi is ready when floating on the top of the boiling water (about 3-4 minutes).

Drain into a colander. Melt 2 tablespoons of butter in a pan over medium-high heat. Add the basil leaves and the gnocchi and fry for a few minutes.

Sprinkle some parmesan cheese on top and serve right away.
